Ingredients: (makes 4 quarts)
6 lbs. Crushed tomatoes with their juice
2.5 lbs. Roasted red peppers
2.5 sliced onions
¾ cup olive oil
1 tblsp. Minced garlic
5 tblsp. Mint
Salt and pepper to taste
In a large pot, add onions & olive oil and ‘sweat’ the onions for approx. 2 minutes Add the garlic, sautee for 1 minute.
Add the rest of the ingredients and bring to a boil.
Turn down the heat and simmer for one hour.
Puree the sauce.
