Ingredients:

3 # Boneless lamb leg
1 # Pork butt
1 ea onions
1 ea celery
2 ea carrots
½ c garlic, chopped
1 c white wine
4 T tomato paste
2 c crushed San Marzano tomatoes, drained
1 T chili flakes

2 c veal stock or rich chicken stock

RED PEPPER MARINARA

Ingredients: (makes 4 quarts)

6 lbs. Crushed tomatoes with their juice 2.5 lbs. Roasted red peppers
2.5 sliced onions
¾ cup olive oil
1 tblsp. Minced garlic
5 tblsp. Mint
Salt and pepper to taste

In a large pot, add onions & olive oil and ‘sweat’ the onions for approx. 2 minutes Add the garlic, sautee for 1 minute.

Ingredients: (makes approx. 50 meatballs)

5 lbs. Ground lamb
5 lbs. Ricotta cheese
2 quarts toasted bread crumbs
1 cup parmesan cheese
¾ tblsp. Minced garlic
2 tblsp. Chili flakes
3/4 tblsp. Oregano
2 tblsp. Chopped mint
3/4 tblsp. Black pepper

1 lbs of savoy spinach
2oz white wine
2 large shallots (finely diced)
1lb tub of ricotta (a good ricotta quality) drained overnight in cheese cloth to remove excess water
1 cups of grated Grana Padano
2oz cups extra virgin olive oil
